Apple Cinnamon Sugar Pancakes1/

1/2 tsp cornstarch
1/2 cup chopped apple
1 tbsp brown sugar (not packed)
1/4 tsp cinnamon
2 dashes of salt
1/3 whole wheat flour
1/2 tsp baking powder
1 no calorie sweetner packet
1/4 cup fat free egg sub.
1/8 tsp vanilla extract

in microwave safe bowl mix cornstarch with 2 teaspoons water. Add apple, brown sugar, 1/4 tsp cinnamon and a dash salt. Toss to coat. Cover and microwave for a minute or until softened.

In medium bowl mix flour, baking soda, sweetner, dash of cinnamon and dash of salt. Stir in egg sub vanilla extract and 1/4 cup of wate. Fold in apple mixture.

Cook like any other pancake like you like. I like mine slightly brown. Top with sugar free syrup
